Gluten Free: Fresh Spring Rolls

Tonight, feeling especially grateful for Nathan this week, I decided to make him an extra fun dinner for Family Home Evening.

I used mostly ingredients from the garden:

I started with a garlic sauce made from rice vinegar, chilies, curry, and sunbutter:

I boiled rice noodles:

And fine shredded the garden vegetables… I used broccoli, carrots, cabbage, turnips, parsnips, and some leftover slaw:

I chopped the rice noodles:

I mixed the noodles in with the vegetables, and then set up a station of a warm bowl of water and the vegetables and an empty plate:

Then I got rice wrappers:

And dipped them in the warm water:

And swirled them around one at a time:

And then rolled them full of vegetables:

And chilled them in the fridge:

I taught Nathan how, and he loved it!

They were so yummy!

And don’t make fun of my shirt. It was my mom’s, and is as much a coping skill as cooking.

We had fun!
